Properties of Spelt |

Spelt has many nutritional virtues, and can
help us remain youthfiul. In fact, it is particularly rich in
anti dioxidants such as selenium which helps fight against
cellular aging. |

Ingredients for 6 people
250g Spelt
Half of 1 onion
1 Carrot
Celery
1 Potato
Extra virgin Olive Oil
150g peeled tomatoes
50g ham and bacon
Preparation:
Soak the Ground Spelt in clean water for about 5 minutes. Strain
and rinse well. Lightly brown all the vegetables in the olive oil
then add some water (about 2 litres). When it comes to the boil,
add the chopped Spelt. Cook for about a half hour, stirring often.
Before serving, add some pecorino (sheeps milk cheese) or grated
parmisan, paprika and a dash of olive oil.
