Ground Spelt

Spelt Soup

500 gr. package

Properties of Spelt

Spelt has many nutritional virtues, and can help us remain youthfiul. In fact, it is particularly rich in anti dioxidants such as selenium which helps fight against cellular aging.

Ingredients for 6 people
250g Spelt
Half of 1 onion
1 Carrot
Celery
1 Potato
Extra virgin Olive Oil
150g peeled tomatoes
50g ham and bacon
Preparation:
Soak the Ground Spelt in clean water for about 5 minutes. Strain and rinse well. Lightly brown all the vegetables in the olive oil then add some water (about 2 litres). When it comes to the boil, add the chopped Spelt. Cook for about a half hour, stirring often. Before serving, add some pecorino (sheeps milk cheese) or grated parmisan, paprika and a dash of olive oil.
